Cookies in ice cream, sprinkles on doughnuts, granola on yogurt, croutons on salad, breadcrumbs on mac & cheeze…you get the idea. So I wanted to make a lentil recipe with the right consistency to hold my interest. This crunchy lentil cabbage salad is incredibly versatile – great as a side or a main course, or even a filling for a wrap or tortilla. And, like pretty much all of my recipes, can be modified based on what is in your refrigerator. I used French lentils since they hold shape and don’t have the mushy texture of other types of lentils. The cabbage makes the dish feel more like a refreshing salad, than just a plain old bowl of beans. And on this sunny, nearly-summer day, that’s why I like it.
